Vinification and Aging
Fermentation takes place in concrete vats, to isolate each plot and express the unique characteristics of our terroirs.
The whole process is temperature-controlled.
The wine is aged for 12 months in oak barrels and 600-liter casks, known as "demi-muids", then in concrete vats for a further 6 months. Light filtration and no fining.
