Tasting Notes
This deep ruby-colored wine reveals a refined nose of raspberry, cherry and delicate violet notes. On the palate, it seduces with its silky texture and freshness, carried by a fine mineral structure and enhanced by elegant spicy touches.

Vinification and Aging
Vinification :
Hand-picked. First sorting in the vineyard, second on a sorting table at harvest reception. In the winery: the grapes are 100% de-stemmed, not crushed (i.e. whole), and gravity-fed into vats. Total maceration of 23 days, including 2 days at cold temperature (12°C): fermentation with indigenous yeasts only, no oenological adjuvants added such as enzymes or tannins. 4 cap punchings.
Ageing :
18 months on lees without racking, 40% in new barrels. Wood: French wood, long toasting at low temperature for a delicate woodiness.

Terroir
Nestled at the mouth of a valley offering some of the most beautiful scenery in the Côte d'Or, this V-shaped vineyard offers a diversity of styles depending on exposure. Of ancient origin, it was once the property of the ducal estate, neighboring abbeys and the Knights of Malta. The presence of an imposing 14th-century château testifies to the historical importance and prestige of the cru.
The nicely sized parcel is located close to the Rhoin river. In the 14th, 15th and 16th centuries, the name "Aux Clous" referred to a "clos", a term used to designate gardens, often surrounded by walls, which gradually gave way to vineyards.

Orders will be delivered to one of the 145 SAQ locations authorized to handle private imports. You will be asked to select the SAQ location where you wish to collect your order.
