Tasting Notes
This Châteauneuf-du-Pape from the great Maison Chapoutier has a beautiful dark ruby color. The nose reveals the warmth of the terroir, with aromas of ripe black fruits, sweet spices and cocoa. Aeration in the decanter opens up the wine's aromatic palette, with notes of blackberry jelly and aromatic herbs. On the palate, the wine is full-bodied, with a perfect balance of velvety tannins, concentration, complexity and freshness. The wine's structure perfectly complements the aromas of liqueurs and rich juices, giving way to notes of sweet spices and dark chocolate on the finish.

Vinification and Aging
Vinification: Vinification in crude concrete vats. The harvested grapes are completely destemmed. Fermentation with indigenous yeasts. Gradual increase in temperature to 28-30°C. 4-5 week vatting period with minimal extraction, resulting in passive infusion and stirring of the lees for the last 3 weeks.
Aging: Approximately 18 months in a raw concrete vat.
