Vinification and Aging
Hand-harvested grapes undergo direct pressing, followed by settling and alcoholic fermentation at temperatures between 15 and 18°C. Alcoholic fermentation occurs in French oak barrels (50% new oak), with aging on fine lees for 10 to 12 months, accompanied by occasional stirring. Malolactic fermentation follows, with fining if needed, then filtration and bottling.
