Tasting Notes
The color is very limpid, with a pale yellow robe dressed in green. On the nose, this Saint Romain releases a fairly strong bouquet, typical of white flowers, toast, ripe yellow fruit (mirabelle plum) and light honey when it has evolved. On the palate, it offers a liveliness that time cushions by revealing a good mellowness. The minerality, the citrus register and the opulent, very fat mouthfeel make this a very pleasant wine to drink from a young age.

Vinification and Aging
The hand-picked grapes are transported quickly and gently in small 20 kg crates to the winery, to avoid crushing the berries, oxidation and uncontrolled pre-fermentation maceration. The harvest is sorted to complete a final fine selection of ripe grapes.
Main steps : The grapes are destemmed and fractionally pressed at low pressure using a pneumatic press. The musts are then cooled to 12°C and settled after 24 hours to remove coarse sludge and extract the potential richness of the grapes and their terroir, while preserving their purity. The must begins its alcoholic fermentation in stainless steel vats at a controlled low temperature, then is quickly filled into oak barrels whose origin (Tronçais and Allier forests) and age (25% new wood) are adapted to the needs of the vintage and cru. Alcoholic fermentation, carried out at cellar temperature by indigenous yeasts (from the grapes), lasts several weeks, even months.
Aging: The wine is traditionally aged for 10 months on lees, without racking. It is during this period that the wine gently develops its structure and complexity, following malolactic fermentation (lowering of acidity) and the exchanges provoked by the barrels (olfactory exchanges and oxidation-reduction). Tasting controls are carried out throughout the ageing process, along with rigorous analytical monitoring. A light filtration, before bottling by us, completes the ageing process without disrupting the harmony and evolutionary potential acquired. -
